Jackfruit

the sweet-smelling, succulent summer fruit with yellow lobes is a favourite for many of us and it is now widely available in the market. While the juicy flesh of the fruit is relished, the hard nut-like seeds are discarded immediately.

Wait! After you read this article, you will never throw away those seeds.


Loaded with proteins and essential vitamins like vitamin B complex, iron, calcium, copper, potassium magnesium and zinc, these nutty seeds help in breaking down complex carbohydrates into energy, prevent bacterial infection and promote digestion. The high amounts of antioxidants help in nurturing and enhancing skin and hair.









Kathal bichir Bhorta(Mashed Jackfruit seeds in Mustard sauce)


Super simple, seasonal and delicious jackfruit seeds vorta which is a perfect combination with hot steamed rice or roti.


Ingredients:



Jackfruit seeds: 1 cup

Onion: 2 medium ( finely chopped)

Garlic: 7-8 medium cloves( finely chopped)

Green chillies: 3-4( finely chopped)

Salt : As per taste

Mustard oil: 2 tbsp

Coriander leaves : 1 cup( finely chopped)

Bengali kasundi ( Mustard sauce)




How to prepare




Khanthal seeds have a dense white outer layer which can be easily removed when dried. However, if the seeds are fresh, it is a little difficult to peel. If time permits, dry the seeds in the sun for just one day. Then this shell can be easily removed. After peeling, a brown coating is seen. You can remove this cover if you wish. However, it is not usually omitted. 
 The seeds can be cut in half and peeled.

First of all, wash the seeds very well.
Take a pressure cooker and place the 
seeds with 1/2 cup water and a pinch of salt. Now put 1 teaspoon of oil in it and boil it well.

Now drain water and take all boiled seeds in a bowl and mashed those boiled seeds very well .

Put 2 teaspoons of oil in the pan. When the oil is very hot, add garlic and green chillies. When the color of garlic is light golden brown, keep it on low heat .Add finely chopped onion  and fry  till it becomes golden brown. Now add the smashed Jackfruit seeds . Mix well with spices. Cook for 5 minutes. Now turn off the gas.


Place in serving bowl. Add 1 tablespoon mustard sauce. Mix very well, garnish with coriander leaves and serve with hot rice.




 Homemade Jackfruit seeds chips  ( kathal bichi bhaja)



Ingredients

 250 gm - Jackfruit seeds 


1 tsp - garlic powder

2 tsp - red chilli powder

1 tsp - Jeera powder

1/2 tsp - turmeric powder

salt and sugar as per taste

1tablespoon Meant leaves ( finely chopped)

1 tbsp - lemon Juice

 Vegetable Oil for frying


How to prepare


Wash the Jackfruit seeds in clean water.
Take the jack fruit seeds in a pressure cooker. Add water to soak the seeds, then add salt and take with 4 whistles. When the pressure opens by itself, take out the seeds.

Remove the white shell from the top of the seed. Red skin will remain intact due to being rich in vitamins.

Cut the seeds like potato chips with a sharp knife.Marinate the seeds with ginger and garlic powder, red chilli powder, Jeera powder, turmeric powder, salt ,sugar and little lime juice for 1 hour.
Then shallow fry them till red and crispy. Sprinkle Meant leaves and serve hot as  a gluten free snacks .


Jackfruit seeds cutlet (khanthal bichir cutlet )

Ingredients




jackfruit seeds, boiled and crushed - 1 cup

potato (boiled small) - 2

chopped green chillies - 2

chopped onions - 1/2 cup

garlic chopped - 1 tsp

ginger chopped - 1 tsp

coriander leaves - 1/2 cup

turmeric powder - 1/2 tsp

coriander powder - 1/2 tsp

Kashmiri red chilli powder - 1/2 TS

garam masala powder - 1/2 tsp

bread crumbs as required

Cornflower mixture  as required

 
oil for frying

salt to taste



How to prepare

Peel outer skin of Jackfruit seeds . Leave the vitamin reach inner shell . Peel the potatoes and cut them into small pieces
 Take the jackfruit seeds and boiled potatoes together in a mixer jar. Grind very well .  Do not use water.

Heat oil in a pan, add onion and fry till golden brown. Then add green chillies, garlic, ginger. Cook for 5 minutes. Now add a little sugar.
Add spice powder and salt to taste. Mix well.
Add the jackfruit seeds and potato mixture and mix well. Turn of the gas .
Roll these into cutlet shapes. Now add some coriander leaves and mix well .

Make a cornfllower mixture in a bowl and beat separately. Spread the bread crumbs on a large plate. Dip the cutlets into the  cornflower mixture one by one
 And cover them with bread crumbs.
Deep fry in oil. Garnishing with coriander leaves 
Serve hot  with green or red chatni or tamato sauce  as a snack or as a side dish.
