Matar Dal is one of the comfort recipes for dal which is frequently prepared on Bengali  house. It is a very healthy and delectable dish .This simple ‘dal’ along with seasonal vegetables and mild flavour of green chilli, hing and ginger is just an awesome combination.. The taste of the ‘dal’ doubles when  adding a teaspoon of ghee . My mother in law added some jackfruit seed  as it is in season. The nutty texture of the seeds gives the ‘dal’ very nice  texture. Jackfruit seeds are available in market now . Just try this authentic recipe it's so dilicious. 



Ingredient's




Matar Dal or Yellow Split Peas – 1 cup

Bottle Gourd leaves & stem ( Lau Shak o danta) - 2 stem 

Potato – 2 (Cut into big pieces )

Sweet Potato – 2 (Cut into big pieces)

Carrot – ½ (Cut into big pieces)

Kanthal Beej or Jackfruit Seeds – 8-10 pcs (Cut into halves)

Raddish ( Mula ) ( cut into big  pieces)

Bringle ( begun ) - 2( cut into big pieces)

Thor ( stem of a banana plant ). - 1 cup ( cut small cube sized)

Turmeric Powder – 1 Pinch

Ginger – 1 tsp (Grated)

Green Chilli – 3-4

Sugar – ½ tsp

Salt – to taste



For Tarka or tempering

Mustard Oil – 3 Tsp

 Fenugreek seeds 1/4 Tsp

Dry Whole Red Chillie – 2

Hing – 1 pinch 

Ghee ( clarified butter) - 1 Tbsp

( Cooking and preparation time maximum 45 to 50 minutes .)



How to prepare :


Wash and cook 1 cup of Yellow Split Peas in the pressure cooker with a little turmeric and salt. About 5 mins at full pressure. You can also cook in a Kadai  but  it will take some time. Wash the Bottle Goard leaves & stem .  Cut the banana stem and soak it in water and wash it well. Otherwise the color of the  Daal may change. When the Daal are cooked, open the lid of the pressure and whisk once more with jackfruit seeds. Heat 1 tbsp oil in a pan. Lightly fry all the vegetables. Sprinkle a pinch of salt .


Now add the vegetables in the dal and stir for 5 minutes. Boil the  dal in a kadai until all the vegetables are cooked well. Add a little sugar and one slited green chilli. Check the salt level at this time. Put the dal down. Heat 1 tbsp ghee and 1 tbsp oil in another pan.  Temper with Fenugreek seeds, dry red chilli and hing. After aroma comes out pour it on the ‘dal’ and cover the pot for few minutes.Garnishing with slited  green chillies . Motor daaler Torkari is ready to serve. 




Arohar Daal  malai 




Dal recipes play a very important role in Indian cuisine. If you take a close look at a typical Indian meal, you would inevitably find a lentil-based dal recipe which diligently fulfils its role of protein-provider to the majority of the population of this country. This Bengali recipe for arhar dal is the simplest in terms of ingredients and can be quickly made.


Ingredients


Arhar Dal/Toor Dal/Split Pigeon Pea Dal - 1cup

Water - 2 cups

Mustered Oil - 2 tsp

Cumin seeds 1/2 tsp

Green Chilies - 2 Slit in halves

Hing or Asafoetida - a pinch

Turmeric Powder - 1/4 tsp

ginger paste - 2 tsp

Salt and sugar as per taste.

Coconut milk 1/2 cup (If not available then  use normal milk )

Yogurt 1/4 cup 

Coriander leaves 1/4cup ( finely chopped )

 Ghee ( clarified butter ) 1 Tbsp


How to prepare :

Firstly 

Wash the Daal  thoroughly two to three times.

Soak 2 cups of pulses in clean cold water for about 30 minutes.

 Take ginger paste. Cut the green chillies and keep aside.

Cut coriander leaves and wash

Spread the turmeric powder on the soaked pulses and wait for about 4 to 5 steps. Beat the yogurt well.

Take out the cooked pulses, mash well and set aside.

Place a deep frying pan over medium heat.

Add one teaspoon of mustard oil and one teaspoon of butter to the  Kadai .Heat it well . Then temper it with Hing, cumin seeds, and Green Chilies.

 Once they splutter add ginger paste & sugar . Cook 2 minutes in low flame . Then add yogurt and cook for 5 minutes . When the oil leave the species add cooked Dal and give it a good stair in high flame 

After 5 minutes low the flame and add coconut milk 

Add the cooked Dal and give it a good stair .Once it has come to a boil check for the salt . Also, adjust the consistency for the dal as per your needs. If you choose to add some water, then allow it to boil once before you turn it off and serve.

Add some chopped Coriander leaves on top as you serve with Rice.
