Have some special short cut Yammi finger leaking dishes. It is one of the easiest and basic bean recepies. It goes well as a side in a Bengali meal .Usually young and tender beans are good to make this . Long bean is mainly a summer vegetable but now easily available through out the year . It has a very good amount of fiber. Recommended for diabetic and hyper tension patients.
Indian long yard bean smashed ( Borboti bata )

Ingredients
1. Indian yard long beans ( borboti ) - 250 gm
2 . Green chillies - 2 ( slices )
3 . Coconut grated - ( 1/2 cup )
4 . Black Mustered seed ( 1 table spoon) and poppy seeds ( 2 Tablespoon)
5 . Mustered oil (1 tea spoon )
6 . Salt and sugar ( add sugarfree instead of sugar if u want ) as per taste
7 .Black cumin seeds ( kalojeera / kalonji) 1/2 Teaspoon
How to prepare
Firstly Wash the long beans and cut them into small pieces.
Put 2-3 beets with beans in pressure cooker. When the pressure lid opens on its own, take out the beans. Cool slightly and place in a large container. Measure the water in the pressure cooker in such a way that the beans are boiled and the water dries.
Put mustard and poppy seeds in a blender jar. Add green chillies and grated coconut. Grind all together to make a very smooth paste.
Smashed the boiled beans well. Put the kalonji ( Black cumin seeds ) in the beans and put the smashed beans in the blender. Add salt and sugar to taste. Add muster seeds, poppy seeds and coconut paste .
Turn on the blender and make a fine smooth paste.
Now place all the paste in a serving bowl. At the end of all, spread 1 teaspoon of mustard oil and mix well. Sprinkle coriander leaves and serve with hot rice.
Indian long yard beans in szechuwan sauce

Ingredients :
1 tablespoon vegetable oil
2 small onion, thinly sliced
1/2 Teaspoon garlic finely chopped
250 gm Chinese long beans or green beans, cut into 3-inch lengths
1 Red bell pepper, 1 Yellow bell paper and cut into 1/3-inch dice
1/2 Teaspoon sugar
1/4 cup water
2 Tablespoons soy sauce
A pinch of black pepper powder
1 Teaspoon Szechuan chilli sauce.
How to prepare
Heat oil in a large pan. When the oil is very hot, fry the garlic. When slightly reddish, add the onion and cook over medium-high heat until light brown.
Add salt to taste. Add long beans red and yellow bell paper stir until well fried.
Now add sugar and cook on high flame for 5 minutes. Add water, cover and cook over medium-low heat until it evaporates and the beans are tender.
Add soy sauce and pepper powder and cook for 1 minute. Check the salt at this time. Now add the Sejuan sauce and stir well for 5 minutes.
When the sauce mixes well, turn off the gas. Serve hot with roti or parotta.
