Two nutritious kids fevourite food You can easily make at home

 


Fast food has a reputation for being unhealthy and unfit for consumption. But this Soybean Burgers recipe will prove otherwise.

Soya chunks burger is a very healthy and nutritious burger which will impress your kids for sure. Making healthy snacks for kids is always a headache . Snacks are the unavoidable part of kids daily menu. Burgers, samosas  are their all time favorite snack too. Kids just can't keep there hands off  these mouth watering snacks. With soya chunks you can give it a healthy twist . Here are the recepies .








Soya Burger Twist 



Ingredients


4 whole wheat or multi grain bun

100g of soya chunks

1/2 cup Red and yellow bell pepper ( finely chopped)

2 no of potato ( boiled and smashed)

2 no of onion ( finely chopped)

1 spn. of lemon juice

1 tbsp. of coriander leaves

1 pinch  chilli powder(or pepper powder)

2 tsp.of Ginger garlic paste

1/2 tsp .of cumin powder

1 pinch turmeric powder

1/2 tsp. of chaat masala

2 tbsp. of oats

3 tbsp. of oil

1 no of tomato

2-3 no of lettuce leaves

3-4 slices of cucumber

2 spn. of mayonnaise

2 spn. of tomato sauce

Sugar and salt as per taste

2 tablespoon of Bengal gram flower



How to prepare



To prepare this  recipe, put a pan over medium flame and add soybeans and a pinch of  salt  with water and boil until soybeans become soft and tender. Drain the water and transfer soybeans into a bowl. Keep aside .

 In a blender, add garlic and ginger paste, one teaspoon of oil,  ready soybeans,  and blend. Blend until you obtain a fine paste. 

In a large bowl mix the blended ingredients with smashed potatoes to form a smooth paste . 

,Add finely chopped onion, bell papers chopped coriander leaves,chaat masala, chilli powder(optional),turmeric powder,lemon juice in a bowl. Mix it well with hands .Now add Bengal gram flower and knead it very well. Divide into equal part . With moist hands shape them into burger patty .

 Over medium flame, place a pan and heat oil in it .Coat patty evenly with oats(or you can use breadcrumbs) Firmly put each patty on the pan and fry the patties, flipping them once, until they're browned and cooked through.once cooked drain on obserb ent paper .Add one tablespoon oil over the pan and toast burger buns until crispy and brown.

Halve the burger bun horizontally.Apply mayonnaise on the base half and tomato sauce on the top half.Place lettuce leaves on the base half and place patty on this .Top with your favourite vegetables   and some more tomato / chilli sauce(optional). Serve immediately .




Hot and Sweet Soya Samosa














Ingredients for dough




2 cups of maida

Pinch of ajwain

1/2 tsp Kalongi ( Nigella seeds)

2 tbsp ghee ( clarified butter) 


1 teaspoon of salt 

1 teaspoon of sugar

Ingredients for stuffing

1/2 cup Soy granules

1 Onion , finely chopped

2 Green Chillies , finely chopped

2 cups boied potato ( cut in cubes)

1 teaspoon Cumin seeds (Jeera)

1 tablespoon Oil

1 tablespoon Ginger Garlic Paste

1 teaspoon Coriander Powder 

1 teaspoon Red Chilli powder

1/4 teaspoon Turmeric powder 

1/2 teaspoon Garam masala powder

2 tbsp fresh coriander leaves ( finely
chopped)

1 teaspoon Sugar

Salt , to taste

Oil for deep frying


How to prepare

To begin with soya Samosa 
Bring 2 cups of water to boil and add 1 teaspoon salt and soya chunks into hot water. Let the soy chunks submerge fully and rest in hot water for about 12 to 15 minutes.

Once soaked and soft, drain the water and keep the soya chunks aside.
Take 2 cup flour add ,1/2 teaspoon kalongi,  1 pinch of awajin, salt and sugar to taste .
Add 2 tablespoon of ghee, mix very well.
Add sufficient water , knead into a stiff dough. Cover and set aside for 45 minutes .

Heat a tablespoon of oil in a pan .Add cumin seeds and wait till they splutter .Then add the finely chopped onion and fry till light golden color.Add finely chopped green chillies. Saute for a minute.Add 1 tsp ginger garlic paste, cook for 5 minutes in medium flame .Now add turmeric powder, coriander powder , cumin powder, red chilli powder  one by one and stir fry for 5 minutes . 
Add salt and sugar  mix well cook for about 15 seconds.
Add soya chunks  and boiled potatoes, mix well, simmer and let it cook for 10 minutes in its own juices. Cover with a lid and let it cook for 5 minutes.
Add the chopped coriander leaves and turn off the flame. Keep it aside to cool

Now, knead the dough once again and divide into 8 – 9 equal round balls.
Roll each ball into a circle and cut it into 2 equal parts with a sharp knife.
The rolled dough should not be too thick or too thin.

Now make a cone by joining the two edges by overlapping them. Press the edges well. Stuff the cone with prepared
Stuffing . Apply water on the edges to seal the samosa cone. Seal the edges tight and repeat the same process with the remaining dough and make the samosas.
Heat oil until hot and gently drop 3 – 4 samosas at a time. Reduce the flame to low.Fry the samosas on low heat until golden brown and crisp on  all  
Sides .Drain in absorbent paper and serve hot with  tea or coffe or green chatni , red chatni , Tomato sauce , as per your choice .
